Weekly Meal Plan

Week of April 10th -April 15th

How does the weekly meal plan work? Every Friday my family eats out, or eats left overs. Saturday or Sunday are my prep days. Monday-Thursday are weekday meals and leftovers. All of my weekly meal plans run from Saturday- Thursday. The grocery list is based on a family of 4, so you might need to adjust for your family size.

Week Of April 10th- April 15th

Plan for the week:

 

Saturday:

  • Breakfast: Avocado Toast, on low Carb Bread, with a fried Egg and everything but the bagel seasoning

  • Lunch: We have a youth basketball game to attend, so we will be eating out for lunch

  • Dinner: Chicken Tortilla soup that I pulled out of my freezer. - This will be my prep night since I’m keeping my nephew on Friday night.

Sunday:

  • Breakfast: yogurt and fresh berries

  • Lunch: We will be skipping lunch this day and having an earlier dinner, but you could have a low carb wrap or sandwich!

  • Dinner: Breakfast for Dinner! Homemade Everything bagel, with blueberry sausage, cheddar cheese, infused chile maple syrup and sriracha cream cheese with a side of homemade tater tots.

Monday:

  • Breakfast: Sous Vide Egg Bite and 1/4 cup blueberries

  • Lunch: Bacon Turkey Club Sandwich on Low carb bread

  • Dinner: Enchiladas - prepped over the weekend

    Total Dinner Time: 45 minutes

Tuesday:

  • Breakfast: Sous Vide Egg Bite and 1/4 cup blueberries

  • Lunch: Snack Plate with fruit, nuts, lunch meat, veggies and homemade ranch.

  • Dinner: Leftover Enchiladas

    Total Dinner Time: 10 minutes

Wednesday:

  • Breakfast: Sous Vide Egg Bite and 1/4 cup blueberries

  • Lunch: Out to Lunch - A salad from a local restaurant.

  • Dinner: Tomato Basil Rice Pasta - Grill extra chicken for tomorrow’s dinner

    Total Dinner Time: 30 minutes

Thursday:

  • Breakfast: Sous Vide Egg Bite and 1/4 cup blueberries

  • Lunch: Tomato Basil Rice Pasta

  • Dinner: Harvest Chicken Salad

    Total Dinner Time: 15 minutes

Grocery List: - Always remember to shop your home before you go to the store!


  • Avocados

  • 2 dozen eggs

  • Tomato

  • Blueberries

  • Strawberries

  • Blackberries

  • 3 bulbs of garlic

  • Baby Bella Mushrooms

  • 2 Poblano peppers

  • 1 red onion

  • Veggies, whatever you like to eat raw

  • Fresh Dill

  • Fresh Chives

  • Thyme

  • Parsley

  • Basil

  • Cherry Tomatoes

  • 1 lemon

  • Mixed Greens

  • Yogurt of choice

  • 8 oz cream cheese

  • sliced cheddar cheese

  • Swiss cheese

  • Parmesan Cheese

  • Goat Cheese

  • Sour Cream

  • Blueberry Sausage- I got mine from Meatheads Union in Wooster- you can use your favorite breakfast sausage

  • 2lbs bacon

  • Turkey Lunch Meat

  • Ham Steak

  • 3lbs Chicken

  • Low Carb bread- or bread of choice

  • Rice Pasta

  • Chipotles in Adobo

  • Enchilada sauce - or use pantry ingredients to make your own

Pantry Items:


  • Everything but the bagel Seasoning, Sea Salt, Kosher Salt, Black Pepper, Chili flakes, Ancho Chile powder ,garlic powder, cumin, Italian Seasoning. - Its time to start building your dried spices up!

  • Bread Flour- This is a must have in my house! Small piece of advice, buy some nice air tight containers and start building your flour collection.

  • Sugar- be the neighbor that has sugar to give your neighbors when they are out.

  • Yeast- I buy SAF instant yeast and keep it in an air safe container in the refrigerator.

  • Honey- I try to always buy from local bee keepers, it’s a little more pricey, but so worth the extra money if you have it!

  • Baking Soda

  • Avocado Oil, Olive oil- Like flour, build up your oil selection.

  • Chicken Bone Broth- Whether you make it from scratch or you buy it in a box. You should always have it on hand in the pantry or the refrigerator.

  • White Vinegar and Balsamic - See above about flour, and oils.

  • Milk/heavy cream

  • Nuts- Whatever you like keep some on hand. They are great for snacks, baking, and throwing on a salad.

  • Dijon Mustard- Even if you don’t like mustard- Dijon is great for salad dressings, adding tang to your mac and cheese, and makes a great chicken salad.

  • Mayo- Read above about Dijon Mustard

  • Tomato Sauce- Keep three cans minimum of crushed, diced, sauce, paste, and whole tomatoes

  • Hot Sauce- Everyone has a favorite. Keep it on hand.

Things to Prep on the weekend:


1) Enchilada’s and sauce OR if you have it in the freezer from last recipe use the Ancho Chile Pork Ribs sauce.

Quick Enchilada Sauce Recipe adapted from SkinnyTaste: Mince 4 cloves of garlic and toast for about 30 seconds in a tablespoon of olive oil. Once fragrant add 1.5 cups of bone broth or chicken stock, 3 cups of tomato sauce, 1 chipotle in adobo, 1 tablespoon of adobo sauce, 2 tsp of ancho chili powder, 1 tsp cumin, salt and pepper to taste and simmer for 10 minutes. This would be a good recipe to double and freeze for a later use.

2) Sous Vide Egg Bites

3) Cook bacon - I line a baking sheet with foil and bake at 385 for around 20 minutes, depending on the thickness of your bacon.

4) Wash and cut fruit and Veggies
