Recently I have been noticing a few extra pounds around my waistline. In my younger years, I would stress about this. I remember the days of worrying about every little thing about my appearance. I would obsess over every detail. Did my makeup look good? Was I up to date with the latest trends? Was my hair shiny? and most of all, did my clothes look good on me? It’s comical to think back about that time in my life. The answer to all of those questions in my early 20’s was no.

It took a LONG time to get comfortable in my skin. And it took an even longer time for me to LOVE my appearance and my body.

I will be 40 this year.

I have accepted that my body is changing. I am becoming a middle-aged woman. The thought of that use to make me cringe. However, now that I’m here, I’m loving it.

I Feel Wise.

It might have taken me 40 years but I feel like I can give pretty solid advice. I feel like I have lived. I finally feel like I have hit that “movie” status. I have experienced enough life that I could have a movie made about me. I have had the “college years.” I made a lot of really poor decisions and made a lot of great memories. I went through the “bad” relationships. The ones that made me question who I am and made me decide that I wanted to be better. I have experienced loss. I have ruined relationships. I have also rebuilt relationships. I have created new friendships. I have also developed new family bonds. I have purchased a home. I have created a life. I have made my life have purpose. I recently couldn’t eat because I was so stressed about my child at a speech and debate tournament. Side-bar- He is a national qualifier!

And all of my wrinkles, grey hair, and extra body fat has been there along the way.

But, just like the grey hair I color. I’m ready to make a few changes to help make me feel better, mentally and physically.

This recipe is for my “lean girls!”, a group of the most fantasic women in my life. This is a 350 calorie lunch that will make you feel full and keep you going all day. Prepping Meals is one of my favorite things to do!!

Meal Prep Taco Bowls

Yield: 4

Ingredients

  • 1 lb 97% lean grass fed beef
  • 1 tbsp chili powder
  • 1/2 tsp kosher salt
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp tomato past
  • 1/2 cup water
  • 8 tbsp greek yogurt - or sour cream
  • 4 oz pickled jalepeno
  • 8 tbsp salsa
  • 8 cup shredded iceberg lettuce
  • 24 grape tomatoes
  • 1 cup refried beans
  • 80 grams shredded cheddar cheese

Instructions

  1. Place ground beef in a skillet. Start to brown. When ground beef is almost cooked through, place all spices and tomato paste in skillet with ground beef. Saute for 2 minutes to cooke out the raw tomato paste. Add water and cook for 5-10 minutes.
  2. Add all cold ingredients (Yogurt, jalapenos, tomatoes, salsa, cheese and iceberg lettuce to a meal prep container. Add cooled ground beef and refried beans to a separate container.
  3. When you are ready to eat, heat up ground beef and refried beans to a microwave for 1 minute. Stir, and continue to cook on 30 second intervals until desired temperature. Mix with cold ingredients. Enjoy!
